This Company Wants You to Put Bugs in Your Cocktails

Almost everyone has a phobia, and mine is bugs ending up in my food. I'm totally cool with bugs crawling on grass and will gladly take a spider outside instead of squashing it, but if there's any sort of insect chilling in my pasta salad, I'm just not having any pasta salad today. Unfortunately, I may be on the wrong side of history: a company is now making cocktails out of crickets, and the hope is that they will encourage people to enjoy bugs in a variety of other foods.

My initial reaction is to scream "NOPE" and run away from my computer as quickly as possible, but I have to admit that company Critter Bitters has a point. Bugs are a much more sustainable and environmentally-friendly protein than the meat we get from cows and pigs, and tons of countries around the world already include certain bugs in their diet. Critter Bitters is hoping that by using cricket-made bitters into cocktails like Old Fashioned, people will feel more comfortable about eating bugs as part of their meals.
According to Julia Plevin and Lucy Knops, the founders of Critter Bitters, it's already working. They put out cricket snacks when serving their cricket-infused cocktails, and people seem much more inclined to taste them after enjoying a cocktail or two. (Maybe that's just because they're getting brave from a buzz on? I don't know.) I truly believe that Julia and Lucy are doing great work, but I think I may need to get over my own ick factor before hopping on this food trend.
